Ingredients

  • Chicken breast - 300 grams
  • Lebanese spice mix (7 spices) - 2 teaspoons
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Romaine lettuce - 100 grams, chopped
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Radishes - 4, sliced
  • Green onions - 2, chopped
  • Parsley - 30 grams, chopped
  • Mint - 15 grams, chopped
  • Pita bread - 1 medium, cut into triangles
  • Sumac - 1 teaspoon

Steps

  1. In a bowl, combine the chicken breast, Lebanese spice mix, 1 tablespoon of olive oil, lemon juice, minced garlic, salt, and black pepper. Marinate for at least 15 minutes.
  2. While the chicken marinates, prepare the fattoush salad by combining the chopped romaine lettuce, diced cucumber, diced tomato, sliced radishes, chopped green onions, parsley, and mint in a large bowl.
  3. In a small bowl, whisk together the remaining tablespoon of olive oil, lemon juice, and sumac to create the dressing. Pour the dressing over the salad and toss gently to combine.
  4. Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from heat and let rest for a few minutes before slicing.
  5. While the chicken is resting, toast the pita bread triangles on the grill for about 2-3 minutes until crispy.
  6. To serve, divide the fattoush salad onto two plates, top with sliced grilled chicken, and garnish with crispy pita triangles.
