Ingredients

  • Mixed greens (arugula, romaine) - 100g
  • Tomato - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Radishes - 4, thinly sliced
  • Bell pepper (red or yellow) - 1, diced
  • Green onion - 2, chopped
  • Pita bread - 1 large, cut into triangles
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Sumac - 1 teaspoon
  • Garlic - 1 clove, minced
  • Fish fillet (white fish like cod or tilapia) - 200g
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. In a bowl, combine olive oil, lemon juice, minced garlic, sumac, salt, and black pepper to create the dressing.
  3. Pat the fish fillet dry and season with salt and pepper. Brush both sides with a little of the dressing.
  4. Grill the fish for about 4-5 minutes on each side, or until cooked through and flaky. Remove from the grill and let it rest.
  5. In a large mixing bowl, combine mixed greens, diced tomato, cucumber, radishes, bell pepper, and green onion.
  6. Add the remaining dressing to the salad and toss well to combine.
  7. In a separate pan, lightly toast the pita bread triangles until golden and crispy.
  8. To serve, divide the salad between two plates, top with the grilled fish, and garnish with toasted pita chips.
