Ingredients

  • Chicken breast - 200 grams
  • Lebanese flatbread - 1 piece
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Radishes - 4, sliced
  • Green bell pepper - 1/2, diced
  • Fresh parsley - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Lemon juice - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Ground sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a bowl, combine the chicken breast with 1 tablespoon olive oil, minced garlic, lemon juice, ground sumac, salt, and black pepper. Let it marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare the salad. In a large mixing bowl, combine the diced cucumber, tomato, radishes, green bell pepper, parsley, and mint.
  4. In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, salt, and pepper to create the dressing.
  5. Grill the marinated chicken for about 5-7 minutes on each side or until fully cooked and internal temperature reaches 75°C (165°F). Remove from grill and let it rest for a few minutes before slicing.
  6. While the chicken is resting, tear the Lebanese flatbread into bite-sized pieces and toast it lightly in the oven or on the grill until crisp.
  7. Add the toasted bread to the salad mixture, pour the dressing over, and toss gently to combine.
  8. Slice the grilled chicken and serve it on top of the fattoush salad. Enjoy your meal!
