Ingredients
- Chicken breast - 200 grams
- Lebanese flatbread - 1 piece
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Radishes - 4, sliced
- Green bell pepper - 1/2, diced
- Fresh parsley - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Lemon juice - 3 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Ground sumac - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your grill or grill pan over medium-high heat.
- In a bowl, combine the chicken breast with 1 tablespoon olive oil, minced garlic, lemon juice, ground sumac, salt, and black pepper. Let it marinate for at least 15 minutes.
- While the chicken is marinating, prepare the salad. In a large mixing bowl, combine the diced cucumber, tomato, radishes, green bell pepper, parsley, and mint.
- In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, salt, and pepper to create the dressing.
- Grill the marinated chicken for about 5-7 minutes on each side or until fully cooked and internal temperature reaches 75°C (165°F). Remove from grill and let it rest for a few minutes before slicing.
- While the chicken is resting, tear the Lebanese flatbread into bite-sized pieces and toast it lightly in the oven or on the grill until crisp.
- Add the toasted bread to the salad mixture, pour the dressing over, and toss gently to combine.
- Slice the grilled chicken and serve it on top of the fattoush salad. Enjoy your meal!
