Ingredients

  • Cauliflower - 300 grams
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Radishes - 4, thinly sliced
  • Green onion - 2, chopped
  • Parsley - 30 grams, finely chopped
  • Mint leaves - 10 grams, finely chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into small florets and place them on a baking sheet.
  3. Drizzle with 1 tablespoon of olive oil, salt, and black pepper. Toss to coat.
  4. Roast the cauliflower in the oven for 20 minutes or until golden and tender, stirring halfway through.
  5. While the cauliflower is roasting, prepare the salad. In a large bowl, combine the diced cucumber, tomato, sliced radishes, chopped green onion, parsley, and mint leaves.
  6. In a small bowl, whisk together the remaining olive oil, lemon juice, sumac, salt, and black pepper to create the dressing.
  7. Once the cauliflower is done roasting, let it cool for a few minutes, then add it to the salad mixture.
  8. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for 15 minutes before serving.
