Ingredients
- Cauliflower - 300 grams
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Radishes - 4, thinly sliced
- Green onion - 2, chopped
- Parsley - 30 grams, finely chopped
- Mint leaves - 10 grams, finely chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Sumac - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into small florets and place them on a baking sheet.
- Drizzle with 1 tablespoon of olive oil, salt, and black pepper. Toss to coat.
- Roast the cauliflower in the oven for 20 minutes or until golden and tender, stirring halfway through.
- While the cauliflower is roasting, prepare the salad. In a large bowl, combine the diced cucumber, tomato, sliced radishes, chopped green onion, parsley, and mint leaves.
- In a small bowl, whisk together the remaining olive oil, lemon juice, sumac, salt, and black pepper to create the dressing.
- Once the cauliflower is done roasting, let it cool for a few minutes, then add it to the salad mixture.
- Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for 15 minutes before serving.
