Ingredients

  • Olive oil - 2 tablespoons
  • Onion, diced - 1 medium (about 150g)
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium (about 100g)
  • Bell pepper, diced - 1 medium (about 150g)
  • Tomato, diced - 1 large (about 200g)
  • Cucumber, diced - 1 small (about 100g)
  • Vegetable broth - 500 ml
  • Fresh parsley, chopped - 1/4 cup
  • Fresh mint, chopped - 1/4 cup
  • Lemon juice - 2 tablespoons
  • Pita bread, cut into triangles - 2 small pieces
  • Salt - to taste
  • Black pepper - to taste
  • Ground sumac - 1 teaspoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced carrot to the pot, cooking for an additional 3 minutes until fragrant.
  3. Stir in the diced bell pepper, tomato, and cucumber. Cook for another 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 10 minutes.
  5. Add the chopped parsley, mint, lemon juice, salt, black pepper, and sumac to the pot. Stir well and simmer for an additional 5 minutes.
  6. While the soup simmers, preheat the oven to 180°C (350°F). Arrange the pita bread triangles on a baking sheet and bake for about 10 minutes or until crispy.
  7. Serve the soup hot, garnished with additional herbs if desired, alongside the crispy pita chips.
