Fattoush Soup

Ingredients
- Olive oil - 2 tablespoons
- Onion, diced - 1 medium (about 150g)
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium (about 100g)
- Bell pepper, diced - 1 medium (about 150g)
- Tomato, diced - 1 large (about 200g)
- Cucumber, diced - 1 small (about 100g)
- Vegetable broth - 500 ml
- Fresh parsley, chopped - 1/4 cup
- Fresh mint, chopped - 1/4 cup
- Lemon juice - 2 tablespoons
- Pita bread, cut into triangles - 2 small pieces
- Salt - to taste
- Black pepper - to taste
- Ground sumac - 1 teaspoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced carrot to the pot, cooking for an additional 3 minutes until fragrant.
- Stir in the diced bell pepper, tomato, and cucumber. Cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 10 minutes.
- Add the chopped parsley, mint, lemon juice, salt, black pepper, and sumac to the pot. Stir well and simmer for an additional 5 minutes.
- While the soup simmers, preheat the oven to 180°C (350°F). Arrange the pita bread triangles on a baking sheet and bake for about 10 minutes or until crispy.
- Serve the soup hot, garnished with additional herbs if desired, alongside the crispy pita chips.
