Ingredients

  • Romaine lettuce - 100g
  • Radishes - 50g, thinly sliced
  • Cucumber - 100g, diced
  • Cherry tomatoes - 100g, halved
  • Green bell pepper - 50g, diced
  • Fresh parsley - 30g, chopped
  • Fresh mint - 10g, chopped
  • Pita bread - 2 pieces, cut into triangles
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Place the pita bread triangles on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with a pinch of salt and pepper.
  3. Bake the pita bread for 10 minutes or until golden and crispy. Remove from the oven and let cool.
  4. In a large bowl, combine the chopped romaine lettuce, sliced radishes, diced cucumber, halved cherry tomatoes, and diced green bell pepper.
  5. Add the chopped parsley and mint to the bowl with the vegetables.
  6. In a small bowl, whisk together the remaining olive oil, lemon juice, sumac, salt, and black pepper to create the dressing.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Break the crispy pita bread into pieces and add to the salad just before serving to maintain its crunch.
