- Basmati rice - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Cucumber - 1, diced
- Cherry tomatoes - 1 cup, halved
- Radishes - 4, thinly sliced
- Green onion - 2, chopped
- Fresh parsley - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Sumac - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, bring 2 cups of water to a boil. Add the soaked rice, a pinch of salt, and reduce the heat to low. Cover and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- In a large mixing bowl, combine the diced red bell pepper, cucumber, cherry tomatoes, sliced radishes, and chopped green onion.
- In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and black pepper to create a dressing.
- Once the rice is cooked, fluff it with a fork and let it cool slightly. Add the rice to the mixing bowl with the vegetables.
- Pour the dressing over the rice and vegetable mixture, then gently toss to combine.
- Finally, fold in the chopped parsley and mint, mixing until everything is well combined. Serve warm or at room temperature.
