Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Cucumber - 1, diced
  • Cherry tomatoes - 1 cup, halved
  • Radishes - 4, thinly sliced
  • Green onion - 2, chopped
  • Fresh parsley - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the soaked rice, a pinch of salt, and reduce the heat to low. Cover and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  3. In a large mixing bowl, combine the diced red bell pepper, cucumber, cherry tomatoes, sliced radishes, and chopped green onion.
  4. In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and black pepper to create a dressing.
  5. Once the rice is cooked, fluff it with a fork and let it cool slightly. Add the rice to the mixing bowl with the vegetables.
  6. Pour the dressing over the rice and vegetable mixture, then gently toss to combine.
  7. Finally, fold in the chopped parsley and mint, mixing until everything is well combined. Serve warm or at room temperature.
