Ingredients

  • Pasta (fusilli or penne) - 150 grams
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Radishes - 4, thinly sliced
  • Green bell pepper - 1, diced
  • Parsley - 1/4 cup, chopped
  • Mint - 2 tablespoons, chopped
  • Lettuce (romaine or arugula) - 2 cups, torn
  • Pita bread - 1 large, cut into triangles
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. While the pasta is cooking, prepare the vegetables: dice the cucumber, tomato, and bell pepper; thinly slice the radishes; and chop the parsley and mint.
  3. In a large bowl, combine the cooked pasta, cucumber, tomato, radishes, bell pepper, parsley, mint, and torn lettuce.
  4. In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and black pepper to create the dressing.
  5. Pour the dressing over the pasta and vegetable mixture, tossing gently to combine all ingredients evenly.
