Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Radishes - 4, thinly sliced
  • Green bell pepper - 1, diced
  • Fresh parsley - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Pomegranate molasses - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste
  • Sumac - 1 teaspoon (optional)
  • Pita bread - 1 large, for garnish, toasted and crushed

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large mixing bowl, combine the diced cucumber, tomato, radishes, green bell pepper, parsley, and mint.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, pomegranate molasses, minced garlic, salt, black pepper, and sumac (if using).
  4. Pour the dressing over the vegetable mixture and toss to combine well.
  5. Add the cooked pasta to the bowl with the vegetables and toss gently to mix everything together.
  6. Serve the Fattoush Pasta in bowls, garnished with the crushed toasted pita bread on top.
