Ingredients
- Pasta (penne or fusilli) - 200 grams
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Radishes - 4, thinly sliced
- Green bell pepper - 1, diced
- Fresh parsley - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Pomegranate molasses - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - to taste
- Black pepper - to taste
- Sumac - 1 teaspoon (optional)
- Pita bread - 1 large, for garnish, toasted and crushed
Steps
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large mixing bowl, combine the diced cucumber, tomato, radishes, green bell pepper, parsley, and mint.
- In a separate small bowl, whisk together the lemon juice, olive oil, pomegranate molasses, minced garlic, salt, black pepper, and sumac (if using).
- Pour the dressing over the vegetable mixture and toss to combine well.
- Add the cooked pasta to the bowl with the vegetables and toss gently to mix everything together.
- Serve the Fattoush Pasta in bowls, garnished with the crushed toasted pita bread on top.
