Ingredients
- Almond flour - 200 grams
- Tapioca flour - 50 grams
- Egg - 1 large
- Olive oil - 2 tablespoons
- Water - 100 ml
- Salt - 1 teaspoon
- Zaatar - 1 teaspoon
- Cucumber - 50 grams, diced
- Tomato - 50 grams, diced
- Radish - 30 grams, thinly sliced
- Bell pepper - 50 grams, diced
- Parsley - 15 grams, chopped
- Mint - 15 grams, chopped
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
Steps
- Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, tapioca flour, salt, and zaatar.
- Add the egg, olive oil, and water to the dry ingredients and mix until a dough forms.
- Transfer the dough to the prepared baking sheet and use your hands to spread it out into a flat, round shape about 1 cm thick.
- Bake the crust in the preheated oven for 15 minutes or until golden and crispy.
- While the flatbread is baking, prepare the salad by combining cucumber, tomato, radish, bell pepper, parsley, and mint in a bowl.
- In a small bowl, whisk together lemon juice, minced garlic, and a pinch of salt to create the dressing.
- Once the flatbread is done baking, remove it from the oven, and top it with the salad mixture and drizzle the dressing over the top.
- Slice and serve immediately while warm.
