- all-purpose flour - 100 grams
- baking powder - 1 teaspoon
- baking soda - 1/2 teaspoon
- salt - 1/4 teaspoon
- ground sumac - 1 teaspoon
- olive oil - 2 tablespoons
- maple syrup - 50 grams
- almond milk - 100 milliliters
- lemon juice - 1 tablespoon
- fresh parsley - 2 tablespoons, finely chopped
- fresh mint - 2 tablespoons, finely chopped
- cucumber - 30 grams, finely chopped
- tomato - 30 grams, finely chopped
- pomegranate seeds - 2 tablespoons (for garnish)
Steps
- Preheat the oven to 180°C (350°F) and grease a small cake pan.
- In a mixing bowl, combine the flour, baking powder, baking soda, salt, and ground sumac.
- In another bowl, whisk together the olive oil, maple syrup, almond milk, and lemon juice until well blended.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the chopped parsley, mint, cucumber, and tomato until evenly distributed.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Once cooled, garnish with pomegranate seeds before serving.
