Fattoush Burger

Ingredients

  • Chickpeas - 240 grams (1 can, drained and rinsed)
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 30 grams, chopped
  • Parsley - 30 grams, chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Flour - 50 grams
  • Olive oil - 2 tablespoons
  • Pita bread - 2 pieces
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Romaine lettuce - 2 leaves, torn
  • Fattoush dressing (pomegranate molasses, lemon juice, olive oil) - 3 tablespoons

Steps

  1. In a mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth but still a bit chunky.
  2. Add the chopped red onion, minced garlic, cilantro, parsley, cumin, coriander, paprika, salt, and black pepper to the mashed chickpeas and mix well.
  3. Gradually add the flour to the mixture, stirring until a sticky dough forms.
  4. Divide the mixture into 2 equal portions and shape them into patties.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat and cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  6. While the patties are cooking, prepare the Fattoush salad by combining sliced tomato, cucumber, and torn romaine lettuce in a bowl.
  7. In a small bowl, whisk together the pomegranate molasses, lemon juice, and remaining olive oil to create the dressing.
  8. Once the patties are cooked, toast the pita bread lightly in the skillet for 1 minute on each side.
  9. Assemble the burgers by placing a chickpea patty on each pita, topping it with the Fattoush salad, and drizzling with the dressing.
