Ingredients

  • Romaine lettuce - 100g
  • Cucumber - 50g
  • Tomato - 100g
  • Radishes - 50g
  • Green onion - 30g
  • Fresh parsley - 20g
  • Fresh mint - 10g
  • Pita bread - 1 large (60g)
  • Olive oil - 2 tablespoons (30ml)
  • Lemon juice - 1 tablespoon (15ml)
  • Sumac - 1 teaspoon (5g)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the pita bread into bite-sized pieces and place them on a baking sheet.
  3. Drizzle the pita pieces with 1 tablespoon of olive oil, sprinkle with salt, and toss to coat.
  4. Bake the pita pieces for about 8-10 minutes until they are golden and crispy.
  5. While the pita is baking, wash and chop the romaine lettuce, cucumber, tomato, radishes, green onion, parsley, and mint into bite-sized pieces.
  6. In a large bowl, combine the chopped vegetables and herbs.
  7. In a small bowl, whisk together the remaining olive oil, lemon juice, sumac, salt, and black pepper to create the dressing.
  8. Once the pita is ready, add it to the bowl of vegetables and pour the dressing over the salad.
  9. Toss everything gently to combine and serve immediately.
