Ingredients

  • Pita bread - 2 large
  • Canned chickpeas - 400 grams (drained and rinsed)
  • Plain Greek yogurt - 200 grams
  • Tahini - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the pita bread into bite-sized pieces and arrange them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Bake for 10-12 minutes or until golden and crispy.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add the drained chickpeas to the skillet along with ground cumin and paprika. Stir and cook for about 5-7 minutes until heated through. Season with salt to taste.
  5. In a small bowl, mix the Greek yogurt, tahini, lemon juice, and a pinch of salt until smooth.
  6. To assemble, place a layer of the crispy pita at the bottom of each serving bowl. Top with the spiced chickpeas, followed by a generous dollop of the yogurt-tahini mixture.
  7. Garnish with chopped fresh parsley. Serve warm.
