  • Cauliflower - 400 grams
  • Tahini - 3 tablespoons
  • Greek yogurt - 100 grams
  • Garlic - 2 cloves
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Pine nuts - 30 grams
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Cut the cauliflower into florets and steam until tender, about 10 minutes. Drain and let cool slightly.
  3. In a bowl, mix tahini, Greek yogurt, minced garlic, lemon juice, cumin, salt, and pepper to create the sauce.
  4. Season the chicken breasts with paprika, salt, and pepper. Heat olive oil in a skillet over medium heat, add the chicken, and cook for about 6-7 minutes on each side until fully cooked. Remove from heat and let rest for a few minutes before slicing.
  5. In a baking dish, layer the steamed cauliflower as the base, followed by the sliced chicken on top.
  6. Drizzle the tahini sauce over the chicken and cauliflower.
  7. In a small pan, toast the pine nuts over medium heat until golden brown, about 3-4 minutes. Sprinkle over the dish.
  8. Bake in the preheated oven for 10 minutes to warm through.
  9. Garnish with fresh parsley before serving.
