Ingredients

  • Pita bread - 2 large
  • Eggplant - 200 grams, diced
  • Zucchini - 150 grams, diced
  • Red bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Plain yogurt - 200 grams
  • Lemon juice - 1 tablespoon
  • Chopped fresh parsley - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the pita bread into triangles and arrange them on a baking sheet. Brush with 1 tablespoon of olive oil and bake for 10 minutes or until crispy.
  3. In a large skillet, heat the remaining olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the diced eggplant, zucchini, and red bell pepper to the skillet. Season with cumin, salt, and black pepper, and cook for about 10-12 minutes until the vegetables are tender.
  5. In a bowl, mix the yogurt with lemon juice and a pinch of salt. Set aside.
  6. Layer the baked pita triangles at the bottom of a baking dish, followed by the sautéed vegetables, and then pour the yogurt mixture evenly over the top.
  7. Bake in the preheated oven for an additional 15 minutes, until heated through and slightly golden on top.
  8. Garnish with chopped parsley before serving.
