Ingredients
- All-purpose flour - 250 grams
- Warm water - 125 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Instant yeast - 1 teaspoon
- Spinach - 200 grams, chopped
- Onion - 1 medium, finely chopped
- Fresh parsley - 30 grams, chopped
- Lemon juice - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Sumac - 1 teaspoon
- Pine nuts - 30 grams, toasted (optional)
Steps
- In a bowl, mix the warm water, olive oil, salt, and instant yeast. Let it sit for 5 minutes until frothy.
- Gradually add the flour to the yeast mixture, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.
- Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes or until it doubles in size.
- In the meantime, heat a pan over medium heat and sauté the chopped onion until translucent.
- Add the chopped spinach to the onions and cook until wilted. Stir in the parsley, lemon juice, black pepper, sumac, and pine nuts. Remove from heat and let it cool.
- Once the dough has risen, punch it down and divide it into 6 equal pieces. Roll each piece into a circle about 10 cm in diameter.
- Place a spoonful of the spinach filling in the center of each circle. Fold the edges to form a triangular shape, ensuring the filling is sealed inside.
- Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.
- Place the fatayer on the tray and bake for 20-25 minutes or until golden brown.
