Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 125 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Instant yeast - 1 teaspoon
  • Spinach - 200 grams, chopped
  • Onion - 1 medium, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Lemon juice - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Sumac - 1 teaspoon
  • Pine nuts - 30 grams, toasted (optional)

Steps

  1. In a bowl, mix the warm water, olive oil, salt, and instant yeast. Let it sit for 5 minutes until frothy.
  2. Gradually add the flour to the yeast mixture, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  3. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes or until it doubles in size.
  4. In the meantime, heat a pan over medium heat and sauté the chopped onion until translucent.
  5. Add the chopped spinach to the onions and cook until wilted. Stir in the parsley, lemon juice, black pepper, sumac, and pine nuts. Remove from heat and let it cool.
  6. Once the dough has risen, punch it down and divide it into 6 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  7. Place a spoonful of the spinach filling in the center of each circle. Fold the edges to form a triangular shape, ensuring the filling is sealed inside.
  8. Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.
  9. Place the fatayer on the tray and bake for 20-25 minutes or until golden brown.
