Ingredients
- All-purpose flour - 200 grams
- Warm water - 100 ml
- Active dry yeast - 5 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Mushrooms (chopped) - 150 grams
- Cooked green lentils - 100 grams
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover, and let it rise in a warm place for 30 minutes.
- In a skillet, heat a tablespoon of olive oil over medium heat. Sauté the chopped onion and garlic until translucent.
- Add the chopped mushrooms, cooked lentils, cumin, coriander, paprika, black pepper, and salt. Cook for about 5-7 minutes until mushrooms are tender. Stir in chopped parsley and lemon juice, then remove from heat.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into a thin circle (about 20 cm in diameter).
- Place a generous amount of the filling in the center of each circle, then fold the edges to form a triangle or half-moon shape. Pinch the edges to seal.
- Place the Fatayer on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
