Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Mushrooms (chopped) - 150 grams
  • Cooked green lentils - 100 grams
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover, and let it rise in a warm place for 30 minutes.
  4. In a skillet, heat a tablespoon of olive oil over medium heat. Sauté the chopped onion and garlic until translucent.
  5. Add the chopped mushrooms, cooked lentils, cumin, coriander, paprika, black pepper, and salt. Cook for about 5-7 minutes until mushrooms are tender. Stir in chopped parsley and lemon juice, then remove from heat.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into a thin circle (about 20 cm in diameter).
  8. Place a generous amount of the filling in the center of each circle, then fold the edges to form a triangle or half-moon shape. Pinch the edges to seal.
  9. Place the Fatayer on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.
  10. Remove from the oven and let cool slightly before serving.
