Ingredients

  • All-purpose flour - 250 grams
  • Active dry yeast - 7 grams
  • Warm water - 150 ml
  • Olive oil - 30 ml
  • Salt - 5 grams
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Parsley - 20 grams, finely chopped
  • Black pepper - 2 grams
  • Sumac - 2 grams
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a mixing bowl, combine the warm water and active dry yeast. Let it sit for 5 minutes until frothy.
  2. In a large bowl, mix the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise for 30 minutes in a warm place.
  4. Meanwhile, in a separate bowl, mix the crumbled feta, shredded mozzarella, chopped parsley, black pepper, and sumac until well combined.
  5. Preheat the oven to 200°C (400°F).
  6. Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 15 cm in diameter.
  7. Place a generous spoonful of the cheese mixture in the center of each circle. Fold the dough over to create a triangle and pinch the edges to seal.
  8. Brush the tops with the beaten egg for a golden finish. Place the filled pastries on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for 15-20 minutes or until golden brown. Serve warm.
