Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 125 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Plant-based cheese (shredded) - 150 grams
  • Fresh parsley (chopped) - 30 grams
  • Fresh mint (chopped) - 15 grams
  • Black pepper - 1/4 teaspoon

Steps

  1. In a small bowl, combine warm water and active dry yeast, letting it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour, salt, and turmeric powder.
  3. Make a well in the center of the flour mixture and add the yeast mixture and olive oil. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  6. While the dough is rising, mix the plant-based cheese, chopped parsley, mint, and black pepper in a bowl until well combined.
  7. Preheat your oven to 220°C (428°F).
  8. Once the dough has risen, punch it down and divide it into 4 equal pieces.
  9. Roll each piece into a circle about 15 cm in diameter.
  10. Place a generous tablespoon of the cheese mixture in the center of each circle, fold the edges over to create a triangular shape, and pinch to seal.
  11. Place the fatayer on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.
