- Dried white beans - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Tomatoes - 2 medium, diced
- Vegetable broth - 500 milliliters
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Soak the dried white beans in water overnight or for at least 8 hours. Drain and rinse before cooking.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced tomatoes and cook for about 5 minutes until they start to break down.
- Add the soaked beans to the pot along with vegetable broth, cumin, paprika, salt, and black pepper. Bring to a boil.
- Reduce the heat to low, cover, and let it simmer for about 40-45 minutes, or until the beans are tender.
- Once the beans are cooked, stir in the chopped parsley and lemon juice. Adjust seasoning if needed.
- Serve hot, garnished with additional parsley if desired.
