Ingredients

  • Dried white beans - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Tomatoes - 2 medium, diced
  • Vegetable broth - 500 milliliters
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Soak the dried white beans in water overnight or for at least 8 hours. Drain and rinse before cooking.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced tomatoes and cook for about 5 minutes until they start to break down.
  5. Add the soaked beans to the pot along with vegetable broth, cumin, paprika, salt, and black pepper. Bring to a boil.
  6. Reduce the heat to low, cover, and let it simmer for about 40-45 minutes, or until the beans are tender.
  7. Once the beans are cooked, stir in the chopped parsley and lemon juice. Adjust seasoning if needed.
  8. Serve hot, garnished with additional parsley if desired.
