Ingredients
- Dried chickpeas - 150 grams
- Garlic cloves - 2
- Fresh parsley - 30 grams
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Baking powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - for frying
- Pita bread - 2 pieces
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Red onion - 1/4, thinly sliced
- Tahini - 3 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1 tablespoon
Steps
- Soak the dried chickpeas in water overnight (or for at least 8 hours).
- Drain and rinse the soaked chickpeas, then place them in a food processor with garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Blend until the mixture is coarse but holds together.
- Form the mixture into small balls or patties, about the size of a golf ball.
- Heat olive oil in a deep pan over medium heat. Fry the falafel balls in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
- In a small bowl, mix tahini, lemon juice, and water until smooth to create the tahini sauce.
- Warm the pita bread in a dry skillet or microwave for a few seconds.
- To assemble the wraps, place a few falafel balls on each pita, add diced tomatoes, cucumber, and red onion, then drizzle with tahini sauce.
- Wrap the pita around the filling, serve immediately, and enjoy!
