Ingredients

  • Pizza dough - 200 grams
  • Chickpeas - 100 grams (cooked)
  • Fresh parsley - 25 grams (chopped)
  • Garlic - 1 clove (minced)
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Tomato sauce - 100 grams
  • Mozzarella cheese - 100 grams (shredded)
  • Cucumber - 1/2 (sliced)
  • Cherry tomatoes - 100 grams (halved)
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, mash the cooked chickpeas and mix in chopped parsley, minced garlic, cumin, coriander, salt, black pepper, baking powder, and 1 tablespoon of olive oil until well combined.
  3. Roll out the pizza dough on a floured surface into a round shape and place it on a baking tray lined with parchment paper.
  4. Spread the tomato sauce evenly over the pizza dough.
  5. Spoon the falafel mixture over the tomato sauce, spreading it out evenly.
  6. Sprinkle the shredded mozzarella cheese on top of the falafel mixture.
  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the edges of the dough are golden brown.
  8. While the pizza is baking, prepare the tahini sauce by mixing tahini, lemon juice, water, and the remaining tablespoon of olive oil in a small bowl until smooth.
  9. Once the pizza is cooked, remove it from the oven and top with sliced cucumber and halved cherry tomatoes.
  10. Drizzle the tahini sauce over the pizza before serving.
