Ingredients
- Pizza dough - 200 grams
- Chickpeas - 100 grams (cooked)
- Fresh parsley - 25 grams (chopped)
- Garlic - 1 clove (minced)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Tomato sauce - 100 grams
- Mozzarella cheese - 100 grams (shredded)
- Cucumber - 1/2 (sliced)
- Cherry tomatoes - 100 grams (halved)
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1 tablespoon
Steps
- Preheat the oven to 220°C (428°F).
- In a bowl, mash the cooked chickpeas and mix in chopped parsley, minced garlic, cumin, coriander, salt, black pepper, baking powder, and 1 tablespoon of olive oil until well combined.
- Roll out the pizza dough on a floured surface into a round shape and place it on a baking tray lined with parchment paper.
- Spread the tomato sauce evenly over the pizza dough.
- Spoon the falafel mixture over the tomato sauce, spreading it out evenly.
- Sprinkle the shredded mozzarella cheese on top of the falafel mixture.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the edges of the dough are golden brown.
- While the pizza is baking, prepare the tahini sauce by mixing tahini, lemon juice, water, and the remaining tablespoon of olive oil in a small bowl until smooth.
- Once the pizza is cooked, remove it from the oven and top with sliced cucumber and halved cherry tomatoes.
- Drizzle the tahini sauce over the pizza before serving.
