Ingredients
- Chickpeas - 200 grams (soaked overnight)
- Garlic - 2 cloves
- Fresh parsley - 30 grams
- Fresh cilantro - 30 grams
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Baking powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- All-purpose flour - 2 tablespoons
- Olive oil - for frying
- Burger buns - 2
- Tahini - 3 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1 tablespoon
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
Steps
- Drain and rinse the soaked chickpeas, then place them in a food processor.
- Add garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper to the food processor.
- Pulse the mixture until it is coarsely blended but not pureed, then transfer to a mixing bowl.
- Stir in the all-purpose flour until well combined, then refrigerate the mixture for 15 minutes.
- Heat olive oil in a frying pan over medium heat.
- Shape the chickpea mixture into 2 patties and fry them in the hot oil for about 4-5 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
- Toast the burger buns lightly on a skillet or in the oven.
- Assemble the burgers by placing a falafel patty on each bun, topped with lettuce, tomato, cucumber, and a generous drizzle of tahini sauce.
