Ingredients

  • Chickpeas - 200 grams (soaked overnight)
  • Garlic - 2 cloves
  • Fresh parsley - 30 grams
  • Fresh cilantro - 30 grams
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Baking powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • All-purpose flour - 2 tablespoons
  • Olive oil - for frying
  • Burger buns - 2
  • Tahini - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 1 tablespoon
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced

Steps

  1. Drain and rinse the soaked chickpeas, then place them in a food processor.
  2. Add garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper to the food processor.
  3. Pulse the mixture until it is coarsely blended but not pureed, then transfer to a mixing bowl.
  4. Stir in the all-purpose flour until well combined, then refrigerate the mixture for 15 minutes.
  5. Heat olive oil in a frying pan over medium heat.
  6. Shape the chickpea mixture into 2 patties and fry them in the hot oil for about 4-5 minutes on each side, or until golden brown and crispy.
  7. While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
  8. Toast the burger buns lightly on a skillet or in the oven.
  9. Assemble the burgers by placing a falafel patty on each bun, topped with lettuce, tomato, cucumber, and a generous drizzle of tahini sauce.
