- Lemon juice - 1 tablespoon

Steps
- Wash the fresh spinach thoroughly and drain well.
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for another 1 minute until fragrant.
- Add the spinach to the skillet and cook until wilted, about 3-4 minutes.
- Season the spinach mixture with salt and black pepper.
- Create four small wells in the spinach and crack an egg into each well.
- Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.
- Drizzle with lemon juice and sprinkle with crumbled feta cheese, if using.
