Ingredients

  • Fresh spinach - 200 grams
  • Eggs - 4 large

  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Optional: feta cheese - 50 grams, crumbled

Steps

  1. Wash the fresh spinach thoroughly and drain well.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  4. Stir in the minced garlic and cook for another 1 minute until fragrant.
  5. Add the spinach to the skillet and cook until wilted, about 3-4 minutes.
  6. Season the spinach mixture with salt and black pepper.
  7. Create four small wells in the spinach and crack an egg into each well.
  8. Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.
  9. Drizzle with lemon juice and sprinkle with crumbled feta cheese, if using.
  10. Serve warm, straight from the skillet.
