Ingredients

  • Eggplant - 1 medium-sized
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium-sized, diced
  • Bell pepper - 1/2, diced
  • Red onion - 1/4, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Oregano - 1 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and place them on a baking sheet.
  3. Drizzle olive oil over the eggplant slices and season with salt and black pepper. Bake in the preheated oven for 20-25 minutes until tender and slightly golden.
  4. In a mixing bowl, combine diced tomatoes, diced bell pepper, minced garlic, sliced red onion, chopped parsley, oregano, and lemon juice. Mix well to create the topping.
  5. Remove the eggplant from the oven and spoon the vegetable mixture evenly over each slice.
  6. Sprinkle crumbled feta cheese and shredded mozzarella cheese on top of the vegetable mixture.
  7. Return the eggplant pizzas to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  8. Remove from the oven, let cool for a minute, then serve warm.
