- Eggplant - 1 medium-sized

- Tomato - 1 medium-sized, diced
- Bell pepper - 1/2, diced
- Red onion - 1/4, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Oregano - 1 teaspoon
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and place them on a baking sheet.
- Drizzle olive oil over the eggplant slices and season with salt and black pepper. Bake in the preheated oven for 20-25 minutes until tender and slightly golden.
- In a mixing bowl, combine diced tomatoes, diced bell pepper, minced garlic, sliced red onion, chopped parsley, oregano, and lemon juice. Mix well to create the topping.
- Remove the eggplant from the oven and spoon the vegetable mixture evenly over each slice.
- Sprinkle crumbled feta cheese and shredded mozzarella cheese on top of the vegetable mixture.
- Return the eggplant pizzas to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Remove from the oven, let cool for a minute, then serve warm.
