Ingredients
- Eggplant - 1 medium (about 250g)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 50g
- Fresh parsley - 2 tablespoons, chopped
- Whole wheat burger buns - 2
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Tomato - 1 medium, sliced
- Cucumber - 1/2 medium, sliced
- Lettuce - 2 leaves
Steps
- Preheat the grill or a grill pan over medium heat.
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
- Rinse the eggplant slices and pat them dry with a paper towel. Brush both sides with olive oil.
- In a bowl, mix the minced garlic, cumin, paprika, salt, black pepper, chickpea flour, and chopped parsley. Set aside.
- Grill the eggplant slices for about 4-5 minutes on each side until they are tender and have grill marks.
- Once grilled, remove the eggplant from the heat and let it cool slightly. Then, coat each slice with the chickpea flour mixture on both sides.
- Return the eggplant to the grill and cook for an additional 3-4 minutes on each side until the coating is crispy.
- In a small bowl, mix tahini and lemon juice to create the sauce.
- To assemble the burgers, place a grilled eggplant slice on the bottom half of each burger bun, add lettuce, tomato, and cucumber slices, then drizzle with tahini sauce. Top with the other half of the bun.
