Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 50g
  • Fresh parsley - 2 tablespoons, chopped
  • Whole wheat burger buns - 2
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced
  • Lettuce - 2 leaves

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat them dry with a paper towel. Brush both sides with olive oil.
  4. In a bowl, mix the minced garlic, cumin, paprika, salt, black pepper, chickpea flour, and chopped parsley. Set aside.
  5. Grill the eggplant slices for about 4-5 minutes on each side until they are tender and have grill marks.
  6. Once grilled, remove the eggplant from the heat and let it cool slightly. Then, coat each slice with the chickpea flour mixture on both sides.
  7. Return the eggplant to the grill and cook for an additional 3-4 minutes on each side until the coating is crispy.
  8. In a small bowl, mix tahini and lemon juice to create the sauce.
  9. To assemble the burgers, place a grilled eggplant slice on the bottom half of each burger bun, add lettuce, tomato, and cucumber slices, then drizzle with tahini sauce. Top with the other half of the bun.
