- All-purpose flour - 100 grams
- Semolina - 50 grams
- Unsalted butter - 50 grams, melted
- Powdered sugar - 30 grams
- Warm water - 30 ml
- Date paste - 100 grams
- Ground cinnamon - 1/2 teaspoon
- Rose water - 1 teaspoon
- Salt - a pinch
Steps
- In a large mixing bowl, combine the all-purpose flour, semolina, melted butter, powdered sugar, and a pinch of salt. Mix well until the mixture resembles coarse crumbs.
- Gradually add warm water and knead the mixture until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.
- While the dough is resting, prepare the filling by mixing the date paste with ground cinnamon and rose water until well combined.
- Preheat your oven to 180°C (350°F).
- Divide the rested dough into 8 equal pieces and flatten each piece into a small disc.
- Place about 1 tablespoon of the date filling in the center of each disc, then fold the dough over the filling and seal it well, shaping it into a ball.
- Use a maamoul mold or your hands to shape the filled dough into decorative patterns.
- Place the cookies on a lined baking sheet and bake in the preheated oven for 15-20 minutes, or until lightly golden.
- Allow the cookies to cool on a wire rack before serving.
