  • pitted dates - 100 grams
  • walnuts - 50 grams
  • all-purpose flour - 60 grams
  • baking powder - 1 teaspoon
  • ground cinnamon - 1/2 teaspoon
  • eggs - 1 large
  • granulated sugar - 40 grams
  • vegetable oil - 30 ml
  • vanilla extract - 1 teaspoon
  • water - 50 ml

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small cake tin.
  2. In a bowl, combine the flour, baking powder, and ground cinnamon. Set aside.
  3. In another bowl, mix the sugar and vegetable oil until well combined.
  4. Add the egg and vanilla extract to the sugar mixture, and whisk until smooth.
  5. Chop the pitted dates and walnuts roughly, then add them to the wet mixture.
  6. Gradually fold the dry ingredients into the wet mixture, alternating with the water, until just combined.
  7. Pour the batter into the prepared cake tin and smooth the top with a spatula.
