- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a medium saucepan, bring the vegetable broth to a boil.
- Once boiling, add the couscous, stir, and remove from heat. Cover and let it sit for 5 minutes to absorb the liquid.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced red bell pepper, zucchini, and carrot to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- Stir in the halved cherry tomatoes and fresh spinach, cooking until the spinach has wilted, about 2 minutes.
- Season the vegetable mixture with cumin, paprika, salt, and black pepper.
- Fluff the couscous with a fork and add it to the skillet with the vegetables. Toss everything together to combine.
