  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Once boiling, add the couscous, stir, and remove from heat. Cover and let it sit for 5 minutes to absorb the liquid.
  3. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  4. Add the diced red bell pepper, zucchini, and carrot to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
  5. Stir in the halved cherry tomatoes and fresh spinach, cooking until the spinach has wilted, about 2 minutes.
  6. Season the vegetable mixture with cumin, paprika, salt, and black pepper.
  7. Fluff the couscous with a fork and add it to the skillet with the vegetables. Toss everything together to combine.
