Ingredients

  • Couscous - 100 grams
  • Water - 200 milliliters
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Red onion - 30 grams, finely chopped
  • Fresh parsley - 20 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, bring 200 milliliters of water to a boil. Add a pinch of salt.
  2. Once boiling, stir in 100 grams of couscous, cover, and remove from heat. Let it sit for 5 minutes.
  3. Fluff the couscous with a fork and let it cool to room temperature.
  4. In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Add the cooled couscous to the vegetable mixture and pour the dressing over it.
  7. Toss everything together gently until well combined. Adjust seasoning as needed.
  8. Serve immediately or refrigerate for 30 minutes to enhance the flavors.
