- Couscous - 100 grams
- Water - 200 milliliters
- Cherry tomatoes - 100 grams, halved
- Cucumber - 100 grams, diced
- Red bell pepper - 50 grams, diced
- Red onion - 30 grams, finely chopped
- Fresh parsley - 20 grams, chopped
- Fresh mint - 10 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium saucepan, bring 200 milliliters of water to a boil. Add a pinch of salt.
- Once boiling, stir in 100 grams of couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and let it cool to room temperature.
- In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Add the cooled couscous to the vegetable mixture and pour the dressing over it.
