Ingredients

  • Fresh cilantro - 200 grams
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chili flakes - 1/4 teaspoon (optional)
  • Coconut milk - 100 ml (for creaminess, optional)

Steps

  1. Heat the olive oil in a pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the ground cumin, salt, black pepper, and chili flakes (if using). Cook for another minute to toast the spices.
  4. Add the chopped cilantro stems (reserve the leaves for garnish) and vegetable broth to the pot. Bring to a boil, then reduce the heat and let simmer for 10 minutes.
  5. Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
  6. Stir in the lemon juice and coconut milk (if using) for added creaminess. Adjust seasoning to taste.
