- Fresh cilantro - 200 grams
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chili flakes - 1/4 teaspoon (optional)
- Coconut milk - 100 ml (for creaminess, optional)
Steps
- Heat the olive oil in a pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the ground cumin, salt, black pepper, and chili flakes (if using). Cook for another minute to toast the spices.
- Add the chopped cilantro stems (reserve the leaves for garnish) and vegetable broth to the pot. Bring to a boil, then reduce the heat and let simmer for 10 minutes.
- Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
- Stir in the lemon juice and coconut milk (if using) for added creaminess. Adjust seasoning to taste.
- Serve hot, garnished with fresh cilantro leaves.
