Ingredients
- Basmati rice - 150 grams
- Fresh cilantro, chopped - 30 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Onion, finely chopped - 1 small
- Vegetable broth - 300 milliliters
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the onions and sauté for another minute until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the oil and mix with the onion and garlic.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork and gently stir in the chopped cilantro, lemon juice, salt, and black pepper. Serve warm.
