Ingredients

  • Basmati rice - 150 grams
  • Fresh cilantro, chopped - 30 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Onion, finely chopped - 1 small
  • Vegetable broth - 300 milliliters
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic to the onions and sauté for another minute until fragrant.
  4. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the oil and mix with the onion and garlic.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  6. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  7. Fluff the rice with a fork and gently stir in the chopped cilantro, lemon juice, salt, and black pepper. Serve warm.
