Ingredients

  • Quinoa - 150 grams
  • Water - 400 ml
  • Fresh cilantro - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pine nuts - 30 grams, toasted

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer to remove its natural coating, called saponin.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is fluffy.
  4. Remove from heat and let it sit, covered, for an additional 5 minutes to steam.
  5. In a large mixing bowl, combine the chopped cilantro, olive oil, minced garlic, lemon juice, cumin, paprika, salt, and black pepper.
  6. Fluff the cooked quinoa with a fork and add it to the mixing bowl with the cilantro mixture. Stir well to combine.
  7. Toast the pine nuts in a dry skillet over medium heat for 3-4 minutes or until golden brown, stirring frequently.
  8. Garnish the cilantro quinoa with the toasted pine nuts before serving.
