Ingredients
- Quinoa - 150 grams
- Water - 400 ml
- Fresh cilantro - 30 grams, chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pine nuts - 30 grams, toasted
Steps
- Rinse the quinoa under cold water in a fine mesh strainer to remove its natural coating, called saponin.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is fluffy.
- Remove from heat and let it sit, covered, for an additional 5 minutes to steam.
- In a large mixing bowl, combine the chopped cilantro, olive oil, minced garlic, lemon juice, cumin, paprika, salt, and black pepper.
- Fluff the cooked quinoa with a fork and add it to the mixing bowl with the cilantro mixture. Stir well to combine.
- Toast the pine nuts in a dry skillet over medium heat for 3-4 minutes or until golden brown, stirring frequently.
- Garnish the cilantro quinoa with the toasted pine nuts before serving.
