Ingredients

  • Chicken thighs - 400 grams
  • Fresh cilantro - 30 grams
  • Lime juice - 60 milliliters
  • Garlic - 3 cloves
  • Olive oil - 30 milliliters
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red chili flakes - 1/4 teaspoon

Steps

  1. In a blender or food processor, combine the fresh cilantro, lime juice, garlic, olive oil, cumin powder, paprika, salt, black pepper, and red chili flakes. Blend until smooth to create the marinade.
  2. Place the chicken thighs in a bowl or a ziplock bag and pour the marinade over them. Ensure the chicken is well coated. Marinate in the refrigerator for at least 15 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill or a grill pan over medium-high heat.
  4. Remove the chicken from the marinade and let any excess marinade drip off.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until they are cooked through and have nice grill marks. The internal temperature should reach 75°C (165°F).
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
  7. Serve with additional lime wedges and a sprinkle of fresh cilantro on top.
