- Chicken thighs - 400 grams
- Fresh cilantro - 30 grams
- Lime juice - 60 milliliters
- Garlic - 3 cloves
- Olive oil - 30 milliliters
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red chili flakes - 1/4 teaspoon
Steps
- In a blender or food processor, combine the fresh cilantro, lime juice, garlic, olive oil, cumin powder, paprika, salt, black pepper, and red chili flakes. Blend until smooth to create the marinade.
- Place the chicken thighs in a bowl or a ziplock bag and pour the marinade over them. Ensure the chicken is well coated. Marinate in the refrigerator for at least 15 minutes, or up to 2 hours for more flavor.
- Preheat your grill or a grill pan over medium-high heat.
- Remove the chicken from the marinade and let any excess marinade drip off.
- Grill the chicken thighs for about 6-7 minutes on each side, or until they are cooked through and have nice grill marks. The internal temperature should reach 75°C (165°F).
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Serve with additional lime wedges and a sprinkle of fresh cilantro on top.
