Ingredients

  • Chickpeas - 200 grams (cooked and drained)

  • Lime juice - 30 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Oats - 50 grams (ground into flour)
  • Olive oil - 2 tablespoons (for cooking)
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 (sliced)
  • Avocado - 1 (sliced)

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the chopped cilantro, red onion, minced garlic, lime juice, ground cumin, ground coriander, salt, and black pepper to the mashed chickpeas.
  3. Mix well until all ingredients are combined.
  4. Gradually add the ground oats to the mixture until it holds together; you may need to adjust the amount slightly.
  5. Form the mixture into two burger patties.
  6. Heat olive oil in a skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until they are golden brown and crispy.
  7. Toast the whole wheat buns lightly on the skillet or grill.
  8. Assemble the burgers by placing a lettuce leaf on each bun, followed by the cooked patty, sliced tomato, and avocado.
  9. Serve immediately with lime wedges on the side.
