- Chicken breast - 200 grams
- Fresh cilantro - 50 grams, chopped
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Chicken broth - 500 ml
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Cumin - 1 teaspoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes, stirring occasionally.
- Cut the chicken breast into bite-sized pieces and add to the pot. Sauté until the chicken is no longer pink, about 5-7 minutes.
- Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low and let it simmer for 10 minutes.
- Stir in the chopped cilantro, lemon juice, cumin, salt, and black pepper. Simmer for another 5 minutes.
