Ingredients

  • Chicken breast - 200 grams
  • Fresh cilantro - 50 grams, chopped
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Chicken broth - 500 ml
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cumin - 1 teaspoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes, stirring occasionally.
  3. Cut the chicken breast into bite-sized pieces and add to the pot. Sauté until the chicken is no longer pink, about 5-7 minutes.
  4. Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low and let it simmer for 10 minutes.
  5. Stir in the chopped cilantro, lemon juice, cumin, salt, and black pepper. Simmer for another 5 minutes.
