- Chickpeas - 200 grams (cooked or canned)
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Vegetable broth - 500 milliliters
- Tomato paste - 2 tablespoons
- Spinach - 100 grams, fresh
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, celery, and red bell pepper. Cook for another 5 minutes until the vegetables begin to soften.
- Stir in the cumin, coriander, paprika, and turmeric, cooking for an additional minute until fragrant.
- Add the cooked chickpeas, vegetable broth, and tomato paste. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Stir in the fresh spinach and cook for another 5 minutes, until the spinach has wilted. Season with salt and black pepper to taste.
- Remove from heat, and stir in the lemon juice. Serve hot, garnished with fresh parsley.
