Ingredients

  • Chickpeas - 200 grams (cooked or canned)
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Vegetable broth - 500 milliliters
  • Tomato paste - 2 tablespoons
  • Spinach - 100 grams, fresh
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, celery, and red bell pepper. Cook for another 5 minutes until the vegetables begin to soften.
  3. Stir in the cumin, coriander, paprika, and turmeric, cooking for an additional minute until fragrant.
  4. Add the cooked chickpeas, vegetable broth, and tomato paste. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  5. Stir in the fresh spinach and cook for another 5 minutes, until the spinach has wilted. Season with salt and black pepper to taste.
  6. Remove from heat, and stir in the lemon juice. Serve hot, garnished with fresh parsley.
