Ingredients
- Canned chickpeas - 400 grams, drained and rinsed
- Garlic - 2 cloves, minced
- Red onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- All-purpose flour - 3 tablespoons
- Olive oil - 2 tablespoons (for cooking)
- Whole wheat burger buns - 2
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
- Lettuce leaves - 2
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1 tablespoon
Steps
- In a large bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add minced garlic, chopped red onion, parsley, cumin, coriander, paprika, salt, and black pepper to the mashed chickpeas and mix well.
- Gradually add the all-purpose flour to the mixture until it holds together. If the mixture is too wet, add a little more flour.
- Form the mixture into 2 patties, about 1.5 cm thick.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
- While the patties cook, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
- To assemble the burgers, place each chickpea patty on a whole wheat bun. Top with lettuce, tomato slices, cucumber slices, and drizzle with tahini sauce.
