Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • All-purpose flour - 3 tablespoons
  • Olive oil - 2 tablespoons (for cooking)
  • Whole wheat burger buns - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Lettuce leaves - 2
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 1 tablespoon

Steps

  1. In a large bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add minced garlic, chopped red onion, parsley, cumin, coriander, paprika, salt, and black pepper to the mashed chickpeas and mix well.
  3. Gradually add the all-purpose flour to the mixture until it holds together. If the mixture is too wet, add a little more flour.
  4. Form the mixture into 2 patties, about 1.5 cm thick.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
  6. While the patties cook, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth.
  7. To assemble the burgers, place each chickpea patty on a whole wheat bun. Top with lettuce, tomato slices, cucumber slices, and drizzle with tahini sauce.
