Chickpea Shawarma

Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Ground turmeric - 1/2 teaspoon
  • Ground cinnamon - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pita bread - 2 pieces
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Red onion - 1/4, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 1-2 tablespoons (to thin tahini sauce)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the drained chickpeas, olive oil, garlic powder, cumin, coriander, smoked paprika, turmeric, cinnamon, salt, and black pepper. Toss until the chickpeas are well-coated.
  3. Spread the seasoned chickpeas evenly on a baking sheet and roast in the preheated oven for 20-25 minutes until crispy, shaking the pan halfway through.
  4. While the chickpeas are roasting, prepare the tahini sauce by mixing tahini, lemon juice, and water in a small bowl. Adjust the water to achieve your desired consistency.
  5. Once the chickpeas are done, remove them from the oven and let them cool slightly.
  6. Warm the pita bread in the oven for the last 5 minutes of chickpea roasting.
  7. To assemble, place a generous amount of roasted chickpeas in each pita pocket, and top with diced tomato, cucumber, red onion, and chopped parsley. Drizzle with tahini sauce before serving.
