- Canned chickpeas - 400 grams, drained and rinsed
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Ground turmeric - 1/2 teaspoon
- Ground cinnamon - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pita bread - 2 pieces
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Red onion - 1/4, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1-2 tablespoons (to thin tahini sauce)
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine the drained chickpeas, olive oil, garlic powder, cumin, coriander, smoked paprika, turmeric, cinnamon, salt, and black pepper. Toss until the chickpeas are well-coated.
- Spread the seasoned chickpeas evenly on a baking sheet and roast in the preheated oven for 20-25 minutes until crispy, shaking the pan halfway through.
- While the chickpeas are roasting, prepare the tahini sauce by mixing tahini, lemon juice, and water in a small bowl. Adjust the water to achieve your desired consistency.
- Once the chickpeas are done, remove them from the oven and let them cool slightly.
- Warm the pita bread in the oven for the last 5 minutes of chickpea roasting.
- To assemble, place a generous amount of roasted chickpeas in each pita pocket, and top with diced tomato, cucumber, red onion, and chopped parsley. Drizzle with tahini sauce before serving.
