Ingredients

  • Chickpeas (cooked) - 200 grams
  • Fresh parsley (chopped) - 30 grams
  • Fresh cilantro (chopped) - 30 grams
  • Green onion (finely chopped) - 2 stalks
  • Garlic (minced) - 2 cloves
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • All-purpose flour - 3 tablespoons
  • Olive oil (for frying) - 100 ml

Steps

  1. In a food processor, combine cooked chickpeas, parsley, cilantro, green onion, garlic, cumin, coriander, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.
  2. Transfer the mixture to a bowl and stir in baking powder and flour until just combined. The mixture should hold together but remain slightly moist.
  3. Heat olive oil in a frying pan over medium heat.
  4. Using your hands, form small patties (about 5 cm in diameter) from the chickpea mixture.
  5. Fry the patties in batches for 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove the fritters from the oil and drain on paper towels. Serve warm with tahini sauce or yogurt.
