Ingredients

  • Chickpeas - 400 grams (canned or cooked)
  • Red onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Fresh parsley - 30 grams (chopped)
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • All-purpose flour - 2 tablespoons
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2 pieces
  • Lettuce - 2 leaves
  • Tomato - 1 (sliced)
  • Cucumber - 1/2 (sliced)
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth but with some chunks remaining.
  2. Add the chopped red onion, minced garlic, chopped parsley, cumin, coriander, paprika, salt, black pepper, and flour to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into two patties, about 1.5 cm thick.
  4. Heat the olive oil in a skillet over medium heat. Fry the patties for about 4-5 minutes on each side or until golden brown and crispy.
  5. While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, and a pinch of salt in a small bowl. Add water as needed to reach a smooth, pourable consistency.
  6. To assemble the burgers, place each chickpea patty on a burger bun, top with lettuce, tomato, cucumber, and drizzle with tahini sauce.
