- Chickpeas - 400 grams (canned or cooked)
- Red onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Fresh parsley - 30 grams (chopped)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- All-purpose flour - 2 tablespoons
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2 pieces
- Lettuce - 2 leaves
- Tomato - 1 (sliced)
- Cucumber - 1/2 (sliced)
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth but with some chunks remaining.
- Add the chopped red onion, minced garlic, chopped parsley, cumin, coriander, paprika, salt, black pepper, and flour to the mashed chickpeas. Mix until well combined.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat the olive oil in a skillet over medium heat. Fry the patties for about 4-5 minutes on each side or until golden brown and crispy.
- While the patties are cooking, prepare the tahini sauce by mixing tahini, lemon juice, and a pinch of salt in a small bowl. Add water as needed to reach a smooth, pourable consistency.
- To assemble the burgers, place each chickpea patty on a burger bun, top with lettuce, tomato, cucumber, and drizzle with tahini sauce.
