- Celery stalk, diced - 1 medium (about 100g)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/4 teaspoon
- Vegetable broth - 500 ml
- Canned chickpeas, drained and rinsed - 240g
- Fresh spinach - 150g
- Lemon juice - 1 tablespoon
- Fresh parsley, chopped - 2 tablespoons (for garnish)
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5-7 minutes until the vegetables soften.
- Stir in the cumin, coriander, paprika, salt, and black pepper. Cook for 1-2 minutes until the spices become fragrant.
- Pour in the vegetable broth and bring to a simmer. Add the drained chickpeas and cook for 10 minutes.
- Add the fresh spinach and cook until wilted, about 3 minutes.
- Stir in the lemon juice, adjust seasoning if necessary, and remove from heat.
- Serve hot, garnished with chopped parsley.
