- Chicken thighs - 400 grams
- Sumac - 2 tablespoons

- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Onion - 1 small, sliced
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Rice - 150 grams (for serving)
Steps
- In a bowl, mix the sumac, olive oil, minced garlic, lemon juice, salt, and black pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
- While the chicken is marinating, prepare the salad by combining the sliced onion, diced tomato, and diced cucumber in a bowl. Drizzle with a little olive oil, salt, and pepper, then toss and set aside.
- Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and place it on the grill or skillet.
- Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the outside is nicely browned.
- While the chicken is cooking, prepare the rice according to package instructions.
- Once the chicken is cooked, remove it from the heat and let it rest for a few minutes. Slice the chicken into strips.
