Ingredients
- Chicken thighs - 300 grams
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Chicken broth - 500 ml
- Cinnamon stick - 1
- Allspice - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parsley - 2 tablespoons, chopped for garnish
- Lemon - 1, cut into wedges for serving
Steps
- In a bowl, mix the chicken thighs with garlic, allspice, salt, and black pepper. Let it marinate for at least 15 minutes.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the marinated chicken thighs to the skillet and brown them on both sides, approximately 5-7 minutes total.
- Pour in the chicken broth and add the cinnamon stick. Bring to a gentle simmer and cover the skillet. Cook for about 20 minutes until the chicken is cooked through.
- While the chicken cooks, rinse the basmati rice under cold water until the water runs clear. Drain well.
- Once the chicken is done, remove it from the skillet and set aside. In the same skillet with the remaining broth, add the drained rice.
- Stir the rice gently and bring it to a boil. Reduce the heat to low, cover the skillet, and let it simmer for 15 minutes until the rice absorbs the liquid.
- Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork.
- Serve the chicken on top of the rice, garnished with chopped parsley and lemon wedges on the side.
