Ingredients

  • Chicken thighs - 300 grams
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Chicken broth - 500 ml
  • Cinnamon stick - 1
  • Allspice - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parsley - 2 tablespoons, chopped for garnish
  • Lemon - 1, cut into wedges for serving

Steps

  1. In a bowl, mix the chicken thighs with garlic, allspice, salt, and black pepper. Let it marinate for at least 15 minutes.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the marinated chicken thighs to the skillet and brown them on both sides, approximately 5-7 minutes total.
  4. Pour in the chicken broth and add the cinnamon stick. Bring to a gentle simmer and cover the skillet. Cook for about 20 minutes until the chicken is cooked through.
  5. While the chicken cooks, rinse the basmati rice under cold water until the water runs clear. Drain well.
  6. Once the chicken is done, remove it from the skillet and set aside. In the same skillet with the remaining broth, add the drained rice.
  7. Stir the rice gently and bring it to a boil. Reduce the heat to low, cover the skillet, and let it simmer for 15 minutes until the rice absorbs the liquid.
  8. Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork.
  9. Serve the chicken on top of the rice, garnished with chopped parsley and lemon wedges on the side.
