  • Pomegranate seeds - 50 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a bowl, combine the pomegranate juice, minced garlic, ground cumin, ground coriander, salt, and black pepper. Mix well to create a marinade.
  2. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let it marinate for at least 15 minutes.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the marinated chicken thighs.
  4. Cook the chicken for about 5-7 minutes on each side, or until they are cooked through and golden brown. Ensure the internal temperature reaches 75°C (165°F).
  5. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  6. To serve, arrange the sliced chicken on a plate, drizzle with any remaining pan juices, and sprinkle generously with pomegranate seeds and chopped parsley.
