- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a bowl, combine the pomegranate juice, minced garlic, ground cumin, ground coriander, salt, and black pepper. Mix well to create a marinade.
- Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let it marinate for at least 15 minutes.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the marinated chicken thighs.
- Cook the chicken for about 5-7 minutes on each side, or until they are cooked through and golden brown. Ensure the internal temperature reaches 75°C (165°F).
- Remove the chicken from the skillet and let it rest for a few minutes before slicing.
