  • Carrot - 1 small, diced
  • Celery - 1 stalk, diced
  • Cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Chicken broth - 1 liter
  • Olive oil - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are soft, about 5 minutes.
  2. Add the diced chicken breast to the pot and cook until the chicken is browned on all sides, about 5-7 minutes.
  3. Stir in the cinnamon, salt, and black pepper, and cook for an additional minute.
  4. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce heat to a simmer and cook for 10 minutes.
  5. Add the vermicelli noodles to the pot and continue simmering for another 5 minutes, or until the noodles are tender.
  6. Remove from heat and stir in the lemon juice and chopped cilantro. Adjust seasoning if necessary.
  7. Serve hot, garnished with additional cilantro if desired.
