Ingredients
- All-purpose flour - 200 grams
- Water - 100 ml
- Active dry yeast - 5 grams
- Olive oil - 15 ml
- Salt - 5 grams
- Ground chicken - 250 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Parsley - 2 tablespoons, chopped
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pine nuts - 30 grams, toasted
- Lemon - 1, for serving
Steps
- In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
- In a large bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
- In a skillet, heat a little olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the ground chicken to the skillet, cooking until browned. Stir in the diced tomato, parsley, cinnamon, allspice, additional salt, and black pepper. Cook for another 5 minutes and remove from heat.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, divide it into 4 equal portions. Roll each portion into a circle about 10 cm in diameter.
- Place a spoonful of the chicken mixture in the center of each circle and fold the edges to create a small open-faced pastry.
- Place the Sfiha on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
- Serve warm with lemon wedges on the side.
