Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 ml
  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Ground chicken - 250 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Parsley - 2 tablespoons, chopped
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pine nuts - 30 grams, toasted
  • Lemon - 1, for serving

Steps

  1. In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
  2. In a large bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
  4. In a skillet, heat a little olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  5. Add the ground chicken to the skillet, cooking until browned. Stir in the diced tomato, parsley, cinnamon, allspice, additional salt, and black pepper. Cook for another 5 minutes and remove from heat.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, divide it into 4 equal portions. Roll each portion into a circle about 10 cm in diameter.
  8. Place a spoonful of the chicken mixture in the center of each circle and fold the edges to create a small open-faced pastry.
  9. Place the Sfiha on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
  10. Serve warm with lemon wedges on the side.
