Ingredients

  • Chicken thighs - 400 grams
  • Cauliflower - 1 medium head (about 500 grams)
  • Onion - 2 medium, thinly sliced
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until caramelized, about 10-15 minutes. Remove half of the onions and set aside for garnishing.
  2. Add the minced garlic to the skillet with the remaining onions and cook for an additional 1-2 minutes until fragrant.
  3. In a bowl, mix together cumin, coriander, turmeric, paprika, salt, and black pepper. Rub the spice mixture all over the chicken thighs.
  4. Add the seasoned chicken thighs to the skillet, cooking them for about 5-7 minutes on each side until browned and cooked through. Remove the chicken and set aside.
  5. In the same skillet, add the cauliflower florets and cook until lightly softened, about 5 minutes. Then, add a splash of water, cover, and allow the cauliflower to steam for another 5 minutes until tender.
  6. Once the cauliflower is cooked, use a food processor to pulse it into rice-sized pieces. Return the riced cauliflower to the skillet, adding lemon juice and adjust seasoning if necessary. Stir well to combine.
  7. To serve, place the cauliflower rice on a plate, slice the chicken thighs, and arrange them on top. Drizzle with the reserved caramelized onions and garnish with fresh parsley.
