Chicken Sayadiyeh

Ingredients
- Chicken thighs - 400 grams
- Cauliflower - 1 medium head (about 500 grams)
- Onion - 2 medium, thinly sliced
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until caramelized, about 10-15 minutes. Remove half of the onions and set aside for garnishing.
- Add the minced garlic to the skillet with the remaining onions and cook for an additional 1-2 minutes until fragrant.
- In a bowl, mix together cumin, coriander, turmeric, paprika, salt, and black pepper. Rub the spice mixture all over the chicken thighs.
- Add the seasoned chicken thighs to the skillet, cooking them for about 5-7 minutes on each side until browned and cooked through. Remove the chicken and set aside.
- In the same skillet, add the cauliflower florets and cook until lightly softened, about 5 minutes. Then, add a splash of water, cover, and allow the cauliflower to steam for another 5 minutes until tender.
- Once the cauliflower is cooked, use a food processor to pulse it into rice-sized pieces. Return the riced cauliflower to the skillet, adding lemon juice and adjust seasoning if necessary. Stir well to combine.
- To serve, place the cauliflower rice on a plate, slice the chicken thighs, and arrange them on top. Drizzle with the reserved caramelized onions and garnish with fresh parsley.
