Ingredients

  • Chicken thighs - 400 grams
  • Onions - 2 large (about 300 grams), thinly sliced
  • Sumac - 2 tablespoons
  • Olive oil - 4 tablespoons
  • Pine nuts - 30 grams, toasted
  • Flatbread - 2 large pieces (such as pita or markook)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the chicken thighs with 2 tablespoons of olive oil, sumac, salt, and black pepper. Mix well to coat the chicken evenly.
  3. Spread the seasoned chicken thighs on a baking tray and roast in the preheated oven for 30-35 minutes, or until the chicken is cooked through and golden brown.
  4. While the chicken is roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt, cooking until they become soft and caramelized, about 15-20 minutes.
  5. Once the onions are caramelized, remove the skillet from heat and mix in the toasted pine nuts.
  6. When the chicken is done, remove it from the oven and allow it to rest for a few minutes. Shred the chicken into bite-sized pieces.
  7. To serve, place the flatbreads on a large serving platter. Top each flatbread with the caramelized onion and pine nut mixture, followed by the shredded chicken.
  8. Garnish with fresh parsley and serve warm.
