Ingredients
- Chicken thighs - 400 grams
- Onions - 2 large (about 300 grams), thinly sliced
- Sumac - 2 tablespoons
- Olive oil - 4 tablespoons
- Pine nuts - 30 grams, toasted
- Flatbread - 2 large pieces (such as pita or markook)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the chicken thighs with 2 tablespoons of olive oil, sumac, salt, and black pepper. Mix well to coat the chicken evenly.
- Spread the seasoned chicken thighs on a baking tray and roast in the preheated oven for 30-35 minutes, or until the chicken is cooked through and golden brown.
- While the chicken is roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt, cooking until they become soft and caramelized, about 15-20 minutes.
- Once the onions are caramelized, remove the skillet from heat and mix in the toasted pine nuts.
- When the chicken is done, remove it from the oven and allow it to rest for a few minutes. Shred the chicken into bite-sized pieces.
- To serve, place the flatbreads on a large serving platter. Top each flatbread with the caramelized onion and pine nut mixture, followed by the shredded chicken.
- Garnish with fresh parsley and serve warm.
